Michelin-Starred Chef Glynn Purnell Opens Innovative Birmingham Restaurant Soon
Celebrated Michelin-starred chef Glynn Purnell is set to introduce an innovative dining experience in Birmingham with his new restaurant, Trillium. This highly anticipated venue will open its doors on Wednesday, December 10, at Snow Hill.
Unique Concept at Trillium
Trillium aims to provide a relaxed atmosphere while delivering bold, seasonal cuisine alongside an exceptional wine list curated by Phil Innes, the founder of Loki Wines. The focus is on shared dining, allowing guests to customize their experience according to their preferences.
Flexible Dining Experience
At Trillium, diners can choose between a traditional three-course meal or a selection of small and large sharing plates. Chef Purnell emphasizes that dining should be about personal choice. He states, “We want our guests to enjoy the menu however they like—having as much or as little as they wish, with no rules.”
The Culinary Team
- Glynn Purnell: Chef Patron, known for earning Birmingham’s first Michelin star in 2005.
- Rob Palmer: Head Chef, previously at Peel’s restaurant, awarded a Michelin star in 2016.
- Andrew Kay: Sous Chef, contributing to Trillium’s exceptional kitchen team.
The team will prepare an evolving menu crafted from the best local ingredients, ensuring that each visit offers a unique experience defined by bold flavors and diverse culinary influences.
The Wine Selection
Phil Innes has designed the wine list to match the creativity of the food. It will feature a mix of renowned classics and hidden gems, with a focus on lesser-known wines. Innes notes that today’s diners appreciate having choices, stating, “We’re creating a wine list that holds as much significance as the food.”
Contemporary Atmosphere
The restaurant’s interior promises an intimate and inviting setting. Inspired by nature and folklore, Trillium’s design includes ethereal touches such as hand-painted finishes and woodland-inspired lighting. An outdoor terrace will provide an ideal space for enjoying wine and small plates while soaking in the vibrant city atmosphere.
