Married couple Lane Li and Chris Wang are set to unveil Rulin, a new restaurant located at 15 East 13th Street in Union Square on January 20. This new establishment will showcase unique hand-pulled noodles along with innovative takes on Lanzhou, Cantonese, and Sichuan cuisines.

Menu Highlights

Rulin will not adhere strictly to traditional recipes but will instead emphasize multicultural culinary creativity. Menu offerings include:

  • Soy sauce duck canapés
  • Binchotan charcoal-grilled short ribs with cumin
  • Noodles with various toppings and soups

Li’s culinary journey began in her family’s kitchen in Flatbush after moving from Guangdong at the age of six. She later honed her skills through the French Culinary Institute and inspired by her experiences at renowned restaurants like Guan Fu and Xi’an Famous Foods.

Noodle Pulling and Unique Dishes

At Rulin, customers will witness the art of noodle pulling through a window in the back. The handmade noodles will feature in six signature dishes, including:

  • Short rib noodles in chile herb sauce ($35)
  • Appetizer duck canapés ($19)
  • Skewered items ($5-11), grilled using binchotan charcoal for a superior taste

The short rib noodles blend beef short rib with a fragrant sauce made from angelica root and Sichuan peppercorns, accompanied by in-house pickled mustard greens.

Restaurant Design and Ambiance

Rulin’s interiors, crafted by Studio Jari, feature a soft minimalism aesthetic with elements like natural wood and marble, creating a warm dining atmosphere.

Operational Hours and Reservations

Rulin will be open from Tuesday to Sunday, primarily focusing on dinner service until 10 p.m. Reservations can be made through Resy, allowing patrons to secure a spot at this exciting new venue in Union Square.
